Ingredients
- 1 lb chicken breasts
- 2 cloves garlic, minced
- 1/2 cup sundried tomatoes, chopped
- 3/4 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan (plus additional for topping)
- 1 tsp thyme
- 1 tsp red pepper flakes
- 1 tbsp olive oil
- Fresh basil, for topping
Instructions
- Preheat oven to 375ºF.
- Pat chicken dry and season with salt and pepper.
- Heat the olive oil in skillet over medium-high heat. Sear the chicken until golden, about 4-5 minutes per side. Transfer chicken to a plate.
- Saute garlic in the pan dripping for 1 minute. Add thyme, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring often.
- Stir in sundried tomatoes and parmesan cheese. Return chicken to skillet and cover with sauce.
- Bake chicken for 15-18 minutes or until cooked through.
- Serve with basil and parmesan cheese.
