Marry Me Chicken

Ingredients

  • 1 lb chicken breasts
  • 2 cloves garlic, minced
  • 1/2 cup sundried tomatoes, chopped
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan (plus additional for topping)
  • 1 tsp thyme
  • 1 tsp red pepper flakes
  • 1 tbsp olive oil
  • Fresh basil, for topping

Instructions

  1. Preheat oven to 375ºF.
  2. Pat chicken dry and season with salt and pepper.
  3. Heat the olive oil in skillet over medium-high heat. Sear the chicken until golden, about 4-5 minutes per side. Transfer chicken to a plate.
  4. Saute garlic in the pan dripping for 1 minute. Add thyme, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring often.
  5. Stir in sundried tomatoes and parmesan cheese. Return chicken to skillet and cover with sauce.
  6. Bake chicken for 15-18 minutes or until cooked through.
  7. Serve with basil and parmesan cheese.
