Gochujang Buttered Noodles

Ingredients

  • 8 oz spaghetti
  • 3 tbsp unsalted butter
  • 6 garlic cloves, finely chopped
  • 2 tbsp gochujang paste
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 scallion (greens thinly sliced for topping)

Instructions

  1. Boil water and cook spaghetti to preferred doneness. Save 1/2 cup of pasta water.
  2. Melt 2 tbsp butter in a medium skillet. Sauté garlic on low until fragrant, salt generously.
  3. Stir in gochujang, honey, and vinegar. Bring to a simmer and cook, stirring constantly, until the mixture reduced, about 3 minutes.
  4. Remove from heat and stir in spaghetti and remaining 1 tbsp of butter until melted. Add pasta water, as needed to thin out the sauce. Season to taste with salt and pepper.
  5. Top with scallion greens and serve immediately.

Serve with Spicy Korean Pork Meatballs.
